AVI Hood FAQs

Frequently Asked Questions

Q. Do I need MUA?

A. The International Mechanical Code requires that which is exhausted to be replaced.  Most local codes require at a minimum heated MUA and the cooling is optional.

Q. Do I need fire protection?

A.
The AVI Hood is listed as Type 1 hood, meaning it has grease filters in it. The International Mechanical Code states that if the appliance produces grease-laden vapors, then fire suppression systems are needed. The history has been the local fire marshal decides on inspection.  In many cases, they let pizza ovens go, as they are low grease producers. As more menus expand to include wings, ribs and other greasy foods, it is likely to cause more ovens to require fire suppression.

Q. How hot do the skirts get on the hood?

A. The UL710 allows for ambient temperature plus 60 degrees. The panels are double-wall constructed with an air gap.  The highest temperature found was 120 degrees, on the upper most inside corner.  All other spots were below 110 degrees.

Q. Why does low CFM mean some thing to me?

A. One CFM of MUA is estimated to cost from $1-$3 a year to heat or cool.  The AVI Hood cuts the exhaust rate of most hoods in the marketplace in half! Going from 2800 CFM to 1200 is a 1600 CFM savings or approximately $2,400 a year, and every year after. The smaller the fan on top of the roof, the quieter the fan will be. Having a fan that has to move more than 1800 CFM can create lots of noise, which is transmitted into the hood and makes the ovens sound very loud.

Q. How do I clean the hood and panels?

A. The panels are all removable and can be taken apart for a deeper cleaning. The upper hood is made of all stainless steel and can be wiped down very easily.  The filters are removable once the skirts are removed.  Over all the AVI Hood can be easily cleaned and made to look beautiful with regular cleaning.

Q. Can I expand the hood to go from two decks to three decks?

A. Yes the top portion of the hood is hung to accommodate one, two, or three ovens. If you have a double and need to expand a third deck can be added but you may need to purchase new skirts to fit the third deck.

Q. Will the AVI Hood fit on my Middlbey or Lincoln ovens?

A. The AVI was designed to work with XLT ovens. The AVI Hood can be retro fitted to older XLT ovens.

Q. Can I see my pizzas in the panel portion?

A. There is a light on both ends of the hood. The light only goes to the top deck so the bottom deck may look darker.  Simply wait for the pizza to exit the oven.

Q. Are there extension shelves available if I do not want to reach into the oven?

A.
XLT offers product shelves that extend the conveyor eleven inches and out of the AVI Hood shrouds.
